INGREDIENTS

500g

Beef Mince

400g

Mayonnaise

4

Brioche Buns

1 Block

Blue Cheese

3tbsp's

Sundried tomato & Jalapeno Pesto

METHOD

Step 1

Season your mince.

Step 2

divide into 8 equal parts and roll into balls.

Step 3

Drizzle your buns with oil and toast in a pan.

Step 4

mix the pesto with the mayonnaise.

Step 5

Make sure the blue cheese is room temperature.

Step 6

Do your patties in twos so you do not over fill you pan.

Step 7

heat your pan on a high heat then squash your balls in with a little oil. Burgers shrink when cooking so you want to make sure you press them down hard enough so they are noticeably bigger than the buns.

Step 8

If they do shrink a lot do not be shy in continuing to smash them during the cooking process.

Step 9

flip them immediately, add the cheese to both.

Step 10

after two minutes stack the patties, cover in foil on a plate.

Step 11

Once all the patties are cooked assemble starting with the spicy mayo on the bottom and ending with the spicy mayo on the top.
