INGREDIENTS

1 Pot

Stracciatella

1 Jar

Green Olives

1 Handful

Parsley

120g

Spaghetti

50g

Butter

1tbsp

Vinegar

3 Tbsp's

Sundried Tomato & Jalapeño Pesto

METHOD

Step 1

roughly chop your parsley and add to a blender with the olives and vinegar.

Step 2

As your blending drizzle in olive oil until you have a loose runny consistency. You can add a splash of water here.

Step 3

Boil your pasta in salted water.

Step 4

Add a ladle full of pasta water to a pan with the pesto. mix well until fully emulsified.

Step 5

then add in your butter followed by your pasta.

Step 6

Toss the pasta in the sauce until you have this nice glossy sauce that is fully coating the spaghetti.

Step 7

Plate up with the pasta first, followed by a dollop of tapenade, spoon over the stracciatella and then pour over the rest of the tapenade.

Step 8

Get stuck in.
