INGREDIENTS

Avocado

Small Tortilla wraps
2
Green Peppers
1 Block
Halloumi
2tbsp
Sundried Tomato & Jalapeno Pesto
METHOD
Step 1
slice your halloumi into thin pieces.
Step 2
Fry the halloumi in a little oil. this will stop it from sticking and burning to the pan.
Step 3
Slice your peppers finely.
Step 4
remove the halloumi once coloured on both sides. Add the peppers to the pan and fry on a high heat to get some char.
Step 5
Turn down the heat and add the halloumi back in with a splash of water .
Step 6
Mix in your Pesto.
Step 7
Mix well and let it bubble away for 10mins until soft and well combined. Season to taste!
Step 8
Meanwhile, slice your avocado and toast your wraps on an open flame. Be careful to turn them constantly otherwise they will burn your house down.
Step 9
Assemble and enjoy!
