INGREDIENTS

Thai Basil & Sesame Pesto
1 Bunch
Pak Choi
300g
Lamb

udon noodle packs
Oyster sauce
METHOD
Step 1
Cut most of the fat off your lamb and slice into thin pieces.
Step 2
cover in oyster sauce and mix well. You want enough so everything is coated but there isn’t a pool at the bottom of the bowl.
Step 3
Chop your pak choi into small pieces disposing the bitter end of it.
Step 4
heat some oil in a (preferably veg oil or rapseed) wok or pan on a high heat until it begins to smoke.
Step 5
Throw in your Lamb and fry for 3 minutes to give it some colour.
Step 6
remove from the pan and then add the pak choi and cook it for 3 minutes.
Step 7
reduce the heat slightly, add in your noodles and the lamb with a splash of water.
Step 8
add in your pesto and a tbsp more of oyster sauce.
Step 9
use tongs to break up the noodles and toss well until all is combined and hot through.
Step 10
Serve up and get stuck in.
