INGREDIENTS
1 Bunch
Spring Onions
250g
Greek Yoghurt
1
Leftover roast Chicken
1 Handful
Sun-Sundried Tomatoes
2tbsp
Basil & Kale Pesto
METHOD
Step 1
Finely chop your spring onions. You can use the the whole thing here.
Step 2
Roughly cut up your tomatoes into bite size pieces.
Step 3
Pull your chicken. do not not break it down to much otherwise it will become fluffy.
Step 4
add your tomatoes, mozzarella and avocado to a bowl and mix well.
Step 5
Then add your pesto and continue to mix.
Step 6
Season to taste and let it sit in the fridge if you can for 30 minutes in order to marinate.
