Pork Loin

METHOD

Step 1

season your pork loin in salt and seal by searing in a hot pan turning to colour each side with a little oil.

Step 2

Add the pork to the oven for between 5-8 Minutes or until internal temp of 63C. Let it rest before slicing.

Step 3

Cut your cucumber into think batons.

Step 4

Peel your carrots and do the same with them. It’s important to peel them as there waxy outer layer stops the carrot from soaking up juices from the sauce. Carrot skins are also quite bitter.

Step 5

Slice your pork into long strips once rested.

Step 6

Add your veggies and pork to a bowl with your pesto and season with soy sauce to taste.

Step 7

Mix well. Let it sit in the fridge for an hour to marinate if you can.
