INGREDIENTS

Onion
300g
Beef Mince
2 Slices
Sourdough

Carrot
2Tbsp
Basil & kale Pesto
200ml
Vegetable Stock
METHOD
Step 1
Heat a pan on a high heat. Get it really hot then add a splash of oil.
Step 2
Add in your mince and leave it a few minutes between mixing. We are looking for a thick caramelisation. You might need to use a spoon to scrape the mince off the bottom of the pan.
Step 3
meanwhile peel and dice your vegetables. Save half the onion and slice it finely for garnish.
Step 4
Sweat your veggies for 10 minutes on a medium heat.
Step 5
Add your mince back in and add your stock and cook for a remainder for 10 minutes or until it has reduced by half.
Step 6
mix in your Pesto.
Step 7
toast your bread and then serve with the mince on top and the fresh onions.
Step 8
