INGREDIENTS

white vinegar

METHOD

Step 1

turn the oven on to 180c and cook your sausages for around 20 minutes.

Step 2

Cut your potatoes into chips and wash under cold water.

Step 3

boil the chips in salted for 5 minutes until soft but still in shape. leave to cool.

Step 4

remove your sausages from the oven, turn up the oven to 220c and cover a baking tray in oil and allow to heat up for a few minutes.

Step 5

Once hot add the chips to the oil and roast for 20 minutes.

Step 6

Meanwhile slice your cabbage.

Step 7

bring the vinegar to the boil with 200ml of water. Add the peppercorns to this mixture. We are making this mixture to lightly pickle the cabbage.

Step 8

Add the cabbage to a sterlie jar and pour the pickling liquid over the top. Seal the jar and leave to one side.

Step 9

after 20 minutes turn your chips and remove the oil. Add back to the oven to crisper up for a further 10 minutes.

Step 10

Slice up your sausage and toss in a bowl with the pesto until fully covered.

Step 11

drain your cabbage and plate up withe saucy sausages and hot chips.
