Basil and Kale pesto

METHOD
Step 1
Half your tomatoes. Grate them and season with salt, pepper and olive oil.
Step 2
boil your pasta until el dente. drain and run under cold water to stop it from cooking. Keep some pasta water.
Step 3
add the pesto and a couple of splashes of pasta water to a pan and heat until a combined sauce.
Step 4
Cut your cold butter into small cubes and gradually add to the mixture as it heats up. emulsify it in by stirring.
Step 5
Add the pasta and toss through the sauce until fully combined.
Step 6
serve with pasta, followed by a small spoonful of tomato. the burrata pulled open on top. a further few spoonfuls of tomatoes.
Step 7
Finish with some finely chopped chives.
